Spring Has Sprung!

If you haven't attended one of my nutrition classes this year, then don't wait any longer!

Your body is giving you the signals that it deserves better, you know that's true. 
Time for some Spring Cleaning!

This Saturday, March 26th
I will be teaching 
The 21 Day Detox Class 
from 10am to 12pm.
You can sign up right here on this little blog. 
I need you to sign up by Friday at 12pm,
so that I know how many people to plan for 
and then I will go out and buy all of the freshness we will be eating on Saturday.

Also, 
March 31st will be another exciting event at our facility in Orem
ELEVATE Your Life Workshop
with

Kristie Rosser
It's FREE to the masses.
She will be going over all of the medical reasons it is good for us to detox our bodies.
Last time she came, we packed the house.
She is a well full of wellness knowledge

You don't want to to miss either of these events!

On another note, I had the best time down in Moab for the Canyonlands Half Marathon.
It was crazy windy, there were times I felt like I was running in place and getting no where fast.
But, the scenery along the route was beautiful. It was well organized and the volunteers were exceptional. 
We had fun hanging out after the run while eating, hiking  and watching the BYU game.

Sweet Luck!

My ancestry from both me ma and pop is mostly Scottish and English,

 but thanks to the Irishness passed on to my family by my spunky 
Mother-in-Law, Peggy Lea Monahan and her kin,
We claim to be Irish today.

Right now,
I'm busy making all of my own raw 
energy gels, electrolyte drinks and energy bites, for my race this weekend in Moab. 
I'm also making many snacks and meals for the rest of the time.
Apparently, I will not be hungry one second if I have anything to do with it!
(I'll post recipes after the weekend)

I'm so excited to take off, head south, munch on goodness along the way, laugh with friends, listen to sweet tunes, arrive and then pull up at the KOA, hook up our camper and then sleep like a champ in a sleeping bag snuggled up to my hunky husband and then wake up bright and early, drink in the clean air, head to the starting line and then run like the wind!

You can tell where my mind has been wandering today, while working in my kitchen. 
I almost forgot that it was St. Patricks Day today.

To celebrate today, I'm also going to whip up some of our favorite foods that are filled with 
greens and goodness.
You should too!

Enjoy a Green Smoothie:

Blend
4 C mango
2 T lime juice
1 banana
1 leaf of collard, swiss chard or kale
1/4 C purified water
serves 2-4

Have 2 bowls full of greens!

A yummy blend of these:
1C mixed green lettuces
1 avocado sliced
1 T raw sesame seeds
1 T raw pumpkin seeds
 Mix a little mustard up with some balsamic vinegar and top the salad.


Mix in a blender these:
1 cooked zucchini
1 stalk celery
1 T red onion
1 T EVOO
5 basil leaves
1/2 t sea salt
1/4 avocado
4 C pure water
Heat up after blended is needed, otherwise enjoy it at room temperature.

From point A to point Be.

 
 
Running with indirection has an amazing benefit.
When you stop making decisions,
The goals in your life take on more clarity.

Lately, as my training has increased
  as I prepare for this weekends half-marathon 
and next months marathon 
and June's Half-Ironman, 
My runs have changed from distance based to more time based runs. 
This has opened up the possibilities for me to run amok!
I just head out the door and let the force lead me.
 

 
I've mentioned several times how running has a dual purpose for me,
one is that it helps keep me in shape physically, 
the other is that it's serves as a form of meditation 
that keeps my mind and spirit in shape.
 
 
 
Running is the best way for me to get from point A to point Be.
Especially when I am able to meander aimlessly, and I do mean aimlessly!
 
Without needing to necessarily think about where I'm going, I can instead focus on 
My Breathing.
Inhale 4 counts, exhale 4 counts.

I corral my wandering mind.
I choose a mantra or an affirmation that I repeat in time with my steps.
"Feeling stronger, getting faster." 

My Senses.
Vision is first, 
I am grateful that I can see the plane overhead, the curve of the street, the color of that pebble.
Then I notice the sounds around me, 
traffic, kids playing, music, birds, the wind.
Then I feel the touch of the sun on my skin,
the smell of the moist ground.
This helps keep me in the present and I can savor The Now.
 
Lace up those shoelaces
Get out and be
a contented wanderer, 
it can renew your soul!

Health and wellness.. It's the new you!

You are what you eat... and you eat what you are!

Do you know what I'm saying?

When I ask my clients what the phrase  
You are what you eat 
means, they say,
"Yes, the quality of food you eat directly translates into the quality of your body."
We know this, 
this has been drilled into our brains for a long time,
but the concept of 
You eat what you are 
is a new way of looking at the whole picture.

Here is what I mean by this statement:

When we don't feel good about ourselves,
when we feel unsure of what our goals are,
when we feel sluggish, puffed up, depressed and dulled
by the toxic foods that are in the typical Standard American Diet,we tend to crave and eat
the crappy food that makes us feel like...well, you know what.
We crave the quick jolt or energy that comes from highly refined and processed "foods", 
but then eating this type of diet creates a vicious cycle 
that causes a jolt, but then a big-time crash!

So, being conscious of this cycle,
guess what?
You can take back your power 
and choose what you want 
the phrases mentioned above
to 
mean about you.
Start now to create the new you, only settle for the best!

teaching, and preppinng and cooking delicious raw food for 30 people.
I couldn't have done it without them. 
I also really appreciate the expertise they both shared during the class.

change the quality of their lives. 
She goes way above and beyond what your typical medical professional provides. 
She personally invests in your health and wellness.

Here are the recipes that I promised the class I'd share that help to make the 
21 Day Detox 
easy and affordable:
 
Make your own, and save your $$$!

Basic Nut Milk:

1 C nuts, soaked for 3 hours in purified water
1 tsp vanilla powder or extract
1 to 2 tsp agave syrup or brown rice syrup
3 C purified water

1. Drain the nuts, discarding water
2. Place in blender with vanilla powder or extract, sweetener, and 3 C purified water.
3. Blend for about 3 minutes.
4. Strain through a fine strainer or cheesecloth.
5. Store in refrigerator; lasts for 2 days.

Basic Coconut Milk:

1 C of dried, unsweetened coconut
4 C of warm purified water

1. Soak coconut in the water for 15 minutes.
2. Strain through a fine strainer.


Almond Butter: 

2 C Almonds (soaked)
1 TBS  Raw Honey or agave (optional)
1/2 tsp Sea Salt (optional)
1 TBS walnut oil

1.Place almonds and oil in food processor or high speed blender.
2.Process for 8-12 minutes.
3. You will need to scrape down the sides in the beginning.
4. If you choose to use the honey or agave and salt, stir in by hand after the butter is made as it will seize the mixture if you try to add it before.

New location for 21 Day Detox Class

What a great way to start March with 51 degree temps!

What are you going to do outside today?
My sweet  hubby is helping assemble my new composter thingy, while I have been 
going through my gardening books. 
I'm getting Spring Fever BIG time. 
(I'm not going to think about the storm that is supposedly on it's way, no, I'm going to soak up this sun today as much as possible!)

Did you know that we, who live in the mountain valley, can start planting all of our Spring salad greens, radishes, broccoli, peas, carrots,  and beets, basically anything that we eat the leaf or root of in two more weeks!! Usually by about March 15, we can plant these seeds as long as the snow is off of the ground and the soil is dry enough to plant. I'm keeping my fingers crossed. 
Start getting your gardening books out, if you haven't already and get ready to plant!
This is a great book that my foodie/gardening expert friend Stefani recommended to me and it's really laid out simply. I'm feeling confident with the help from this book, I am going to have a bounteous garden this year.
With my desire to eat organic and local...this is absolutely my solution.

This month, we have a series of nutrition classes coming up:

First, because of the demand for my 21 Day Detox class, we are moving it to a new location. 
We are opening it up to 30 people.
